Generally speaking:

create rclone remote pointing to cloud storage

create a directory on that cloud storage to hold the encrypted stuff:

create a crypt remote pointing at that directory

the crypt remote is the one you'll use for mounting and so forth.
Now when you write to the crypt remote:
> rclone mkdir encryption-test:/BINGBANGBOING
> rclone lsd encryption-test:/

the stuff you write gets written to the underlying remote encrypted:
